Recipe: Mokkapalat

Mokkapalat (Finnish Brownies) is a traditional Finnish desert that is so easy to make and super delicious! From what I can tell it is usually made with a coffee however since my hubby does not like coffee we do not put it in, so if you decide you want to try a more traditional recipe you can search on google and should find it. Also from what I have seen, the recipe I have has a vanilija cake whereas it would be appear chocolate is the preferred. However I think using the vanilija balances the flavors more so it is not too chocolately and not too sweet.

So here is my recipe, I hope you enjoy them!

Ingredients:
2 eggs
1 cup sugar
2 cups flour
2 T baking powder
2 t vanilija sugar
2/3 cup milk
2/3 cup butter, melted

Topping:
2 T cocoa powder
1/4 cup butter melted
1 2/3 cup powdered sugar
2 t vanilija sugar
2 T milk

In a medium size bowl whisk the eggs and sugar to form a foam.
Mix all the dry ingredients together and add to the sugar mixture.
Add the milk and butter and stir. The batter will be thicker than a cake batter and will be shiny and silky texture.

Pour into a 9x13 cake pan and bake for 15 min at 392F (200C)

As it bakes you can make your topping, mix the first four ingredients together and use the milk to help create a smooth texture, but you do not want it to be thin like icy, and it should still be a little thicker than typical frosting. Almost like a soft clay that is still spreadable.

When you take your pan out of the oven, check to make sure the middle is cooked through with a toothpick. Then take your topping, while still hot and spread on top, the topping will melt and spread nicely around. Finish off with colorful sprinkles and let cool. Cut into squares and enjoy!
