Recipe: Pannukakku (Finnish Pancake)
Finnish Pancake (Pannukakku)
A traditional Finnish pancake is thick and gooey. Serve sprinkled with sugar or with whipped topping and jam or fruit topping.This recipe will make enough for 6-8 people, and when I make this I used a 9x13 pan although it is typically baked in a large round pan.
For this you will need:
3 eggs
1/2 c sugar
1 t salt
2 c milk
1 1/4 c flour
1/4 c butter
Preheat the oven to 230 C
In a med-large bowl, stir sugar, flour and salt till well blended.
Add eggs and milk to the flour mixture.
Melt butter in pan and coat the edges, then pour remaining butter in batter.
(For this step, I melt the butter and then use a brush and spread the butter around the pan then pour the rest in the batter)
Pour batter in the baking pan and bake for 30 minutes.
Depending on how thick the batter is you may want to add an extra 5 minutes for baking otherwise the top will be too wet.
The batter will rise quite a bit too, so it is a good idea to place a cooking sheet under the pan in case of it going over. When you take it out of the oven, it will still be risen, as it cools it will flatten out. I would say cool for 15 minutes. Cut and serve with toppings of your choice. Hope you enjoy!
